Chef Stephane is from Montmartre, Paris, Hervé the restauranteur is French, his partner Georgés is French and the Bistro food and drink is, well, as French as you'll get in Brighton! The menu includes plenty of variety in tastes and flavours, with offerings for hardy meat and game eaters including pheasant, duck and beef, and dishes for fish and seafood lovers too; mussels, shark, and tuna steaks. Vegetarians may sulk with their single option but that shouldn't be much of a surprise for anyone who's ever visited France.
