What a fantasic place.
The feel is that of a stylish cafe in a continental fruit market with a very lively yet relaxing atmosphere.
Such a nice change from the formulaic coffee franchises that seem to be invading this city.
This will be the next big thing.

Carlo's latest venture - The flying italian hijacks (for a fee) cafes and venues and installs there for a night, providing authentic modern italian home cooking to a small number of lucky diners.
The flying italian cooks two set menus - one completely vegetarian - which include dishes from his past life in Italy and his present life in Brighton & Hove.
Chef Stephane is from Montmartre, Paris, Hervé the restauranteur is French, his partner Georgés is French and the Bistro food and drink is, well, as French as you'll get in Brighton!
The menu includes plenty of variety in tastes and flavours, with offerings for hardy meat and game eaters including pheasant, duck and beef, and dishes for fish and seafood lovers too; mussels, shark, and tuna steaks. Vegetarians may sulk with their single option but that shouldn't be much of a surprise for anyone who's ever visited France.

The Castle Inn, Hickstead, is one of those places you could easily miss or not know of its existence. A twenty minute drive up the A23 is too much to ask of many Brightonians who have an abundance of good restaurants within walking distance.
